This low-fat salad dressing is great with Rainbow Broccoli Salad as it contains extra antioxidant and detoxifying properties due to the orange and lemon juices and the cilantro.  Or pair it with any other salad as well - also goes great with spinach salad.

This recipe provides antioxidant and detoxifying vitamins and phytochemicals to enhance your body's natural disease-fighting capacity.  Eat it on it's own for a light lunch, or add some chicken or turkey breast to the salad for some extra protein.
 
Preparation time 15 minutes. Serves 4-6 as side dish or 2-3 as a light lunch.

Blueberry Flaxseed Spread

A great replacement for butter and jam, this breadfast spread provides omega-3s and antioxidants to start the day right.
 
1 cup fresh organic blueberries
2 Tbsp flax seeds
1 Tsp honey (or according to taste)
 
Grind the flax seeds to a paste in a coffee grinder.
In a mini blender, blend the blueberries until they turn into a smooth puree.
Add the ground flax seeds and honey and stir well. Keep stored in the refrigerator.
Enjoy as a spread over wholegrain toast.
Makes about 1 cup.
