Pork and Sweet Pepper Stroganoff

Ingredients:
1 pork tenderloin
1 large onion
8-oz (227 g) pkg sliced mushrooms
1/2cup (125 ml ) chicken broth
1tbsp (15 ml ) Worcestershire sauce
2tsp (10 ml ) paprika
1tsp (5 ml ) each Dijon mustard, dried thyme leaves and salt
1 large red pepper
1/2cup ( 125 ml ) low-fat sour cream
1/2cup ( 125 ml) chopped parsley
Generous grinding of black pepper

1. Slice pork into bite-size strips or pieces. Chop onion. Lightly coat a large frying pan with oil and set over medium-high heat. Add pork and stir-fry just until it turns colour, 5 to 6 min. Add onion, mushrooms, broth, Worcestershire, paprika, Dijon, thyme and salt. Bring to a boil, uncovered and stirring occasionally, for 5 min. Meanwhile, slice pepper into strips.

Cabbage Roll Stir-Fry

Ingredients:
1 large onion, chopped
1lb (500 g) ground pork or beef
28-oz (796 ml) can plum tomatoes, drained and coarsely chopped
71/2-oz (213 ml) can tomato sauce
1tbsp (15 ml) brown sugar
2tbsp (30ml ) vinegar
1tsp (5ml) each dried oregano and thyme leaves
1/2tsp (2 ml) each salt and pepper
1 green pepper
454-g pkg coleslaw or ½ cabbage

1. Lightly coat a wok or large saucepan with oil and place over medium-high heat. Add onion and crumble in pork. Using a fork, stir frequently to keep meat crumbly until it's almost cooked through, 3 to 4 min. Add the tomatoes, tomato sauce, brown sugar, vinegar and seasonings. Stir often until flavour develops, about 5 min.

Asian Pea and Lettuce Salad

This salad is packed with flavor and texture.  Consume as-is or add some chicken or shrimp!
 
Preparation time 20 min
Cooking time 5 min
Makes 4 servings
 
Ingredients:
2cups(500ml)shelled or frozen peas
½ red or yellow pepper
½ small fennel or peeled daikon or jicama
1 head Boston lettuce
2tbsp (30ml) vegetable oil
2tsp (10ml) dark sesame oil
1tbsp (15ml) soy sauce
1tbsp (15ml) finely grated fresh ginger
1tsp (5ml) granulated sugar
Sesame seeds (optional)

1. Partially fill a large saucepan with water and bring to a boil over high heat. Add peas. Boil, uncovered, until tender, 5 to 15 min. Frozen peas need about 4 min. Meanwhile, finely mince pepper and fennel. Separate lettuce leaves, then shred. Place pepper, fennel and lettuce in a large bowl.

Asian Tomato Salad

We rarely think of Oriental and sliced tomatoes at the same time, so this new slant comes as a surprise. It's especially good with grilled chicken or steak.

Ingredients:
2tbsp (30 ml) vegetable oil
2tsp (10 ml) sesame oil
3tbsp (45 ml) rice wine vinegar or 2 tblp ( 30 ml) white vinegar or lime juice
1 garlic clove, minced
1tsp (5 ml) freshly grated ginger or bottled pureed or minced ginger
1/2tsp (2 ml) chili-garlic sauce or ¼ tsp (1 ml) hot red chili flakes ( optional)
1/4tsp (1 ml) each of salt and granulated sugar
4cups (1 L) mixed greens, such as spinach and watercress
4 ripe tomatoes or 4 cups 1L) cherry tomatoes
2 to 4 green onions, thinly sliced
