Holiday Spinach Salad

This antioxidant rich salad is great for the season as it is packed full of reds and greens, not to mention walnuts for added seasonal flavor. 

  • 1/2 cup pomegranate juice
  • 2 tbps white wine vinegar
  • 2 tbsp olive oil
  • 2 tbsp basil leaves, finely chopped
  • Salt and ground black pepper
  • 6 cups baby spinach leaves
  • 1/3 cup dried cranberries
  • 1/3 cup walnut pieces

 
Combine pomegranate juice, vinegar, oil, and basil.   Seal and shake to combine. Season, to taste, with salt and pepper.  Place spinach on a serving platter and top with cranberries and walnuts. Pour vinaigrette over spinach and serve for a delicious addition to your holiday meal.
