Brown Rice With Fruit And Nuts

You can actually start preparing the rice for this breakfast or snack dish the night before.  Bring the water and salt to boil in a small pot and stir in the rice.  Cover tightly and turn off the heat.  By morning, the rice will be nearly done.  You’ll need only to add a little water and simmer the rice a few minutes.

Serves 2
1 ½ cups water
½ teaspoon salt
¾ cup brown rice
1 – 2 cups diced fresh or frozen fruit, such as strawberries, blueberries and raspberries
1 cup walnuts or pecans

1.    Bring the water and salt to boil in a small pot and stir in the rice.  Reduce the heat to low and simmer with the lid slightly ajar for 40 minuets or until the water is absorbed and the rice is tender.

2.    While the rice simmers, place the nuts in a small skillet over medium to low heat.  Stirring often, dry-roast the nuts for 1 to 2 minuets or until they begin to brown and turn fragrant.  Be careful not to burn.  Transfer the roasted nuts to a plate and let cool.

3.    Add the fruit and nuts to the cooked rice and gently stir.  Serve immediately.
